Dear Friends, here’s what’s up this week:


Summer often means a slower pace of life, more recreation and vacation–but be sure not to take a vacation from your vocation to be saint!  Encountering the Lord through daily prayer, Sunday Mass and frequent Confession should always remain the basis of our spiritual lives.  When traveling, find local Mass and Confession times using this convenient website:

Since it’s Summer, I share with you an authentic gazpacho recipe which I got from my friend Victoria who grew up in Seville, Spain, where her family ate this as their first course daily at lunch time in the Summer:


  • 2 lbs very red tomatoes
  • 1 sm bell pepper (green is traditional, but red, yellow or orange peppers may be substituted)

  • 1 clove garlic

  • 2 tbs vinegar (sherry vinegar, if possible–or red wine vinegar)

  • 1 tbs salt

  • 3/4 cup olive oil

  • 3 slices bread (briefly soak in water, then squeeze out water)

  • 1 med cucumber

Blend and chill!

Serve with the following garnishes (cubed):

  • Tomatoes

  • Cucumbers

  • Peppers

  • croutons (plain)

Serves 4-6
