Sr. Benedick Kesock and her pancakes
Sr. Benedict Kesock, O.S.B. serves
pancakes to hungry parishioners.

The Shrove Tuesday pancake tradition is often attributed to the need to use up ingredients that Christians abstained from during the 40 days of Lent. In addition to meat, these foods once included fat, eggs and dairy products. Since these items might not keep until Easter, pancakes were a great way to prevent perishables from going to waste.

"Shrove" comes from the verb "to shrive," meaning "to hear a confession."
